Here are two amazing dishes that I recently prepared in my determination to adopt a and sugar free diet.

The first one is Wild Rice Spaghetti with sautéed vegetables. I came across pasta products from wild rice recently, and I love it! This was my second go at cooking it – very important to rinse the pasta well once its done – otherwise you end up with a pasta mash 🙂 Another thing I noticed, as I love my regular pasta al dente, in this case it has a better taste once it passes the al dente stage. Rinse thoroughly, and then bring to the pan with generous splash of olive oil, pepper, salt and oregano!

The second plate is a Cauliflower Crust Margarita. it is also my second attempt – whereby I actually added almond flour to the mix (the first time I only mixed cauliflower, eggs and cheese) – and it definitely gave it a more solid texture, and added a slight nutty taste.

I trust that anything cooked/baked with white flour, milk, butter and sugar gives you a tastier and more gorgeous/appetizing looking end product. However, knowing that you are preparing something that is healthy and home made gives you a different and better satisfaction!
